  • 2 tablespoons olive oil
  • 2 shallots, minced
  • 1 pound cremini mushrooms, stems removed
  • 1 tablespoon unsalted butter
  • 1 tablespoon fresh thyme leaves
  • 1/2 cup white wine
  • salt and freshly ground black pepper

Directions

  1. In a large skillet, heat the oil over medium-high heat.
  2. Add the shallots, and cook until golden.
  3. Add the mushrooms, top side down, and cook them for 5 minutes.
  4. Turn them over, and add the butter, thyme, wine, and salt and pepper to taste.
  5. Reduce the heat to medium, and cook until the liquid has evaporated, about 10 minutes.
