Apple-Brussels Sprouts Salad


Crunchy, sweet and loaded with flavor, this recipe is the perfect addition to any table. Developed by NYC-based food stylist, recipe developer and photographer Judy Kim, Apple-Brussels Sprouts Salad perfectly blends crisp Fuji apples with the tangy flavor of Brussels sprouts and chopped walnuts. What you need to get started:

  • 2 tbsp. red wine vinegar
  • Extra-virgin olive oil
  • 1 tsp. honey
  • 1/4 c. chopped parsley
  • Kosher salt
  • Freshly ground black pepper
  • 1/2 c. chopped walnuts
  • 2 lb. Brussels sprouts, shredded
  • 1 large Fuji apple, cored and thinly sliced
  • 1/4 c. Freshly grated pecorino

What you need to get started:

  • 1 1/2 pounds hearty greens, well washed, stems removed, and sliced into 3-inch strips
  • 3 tablespoons extra-virgin olive oil
  • 8 cloves garlic, sliced paper-thin
  • 1 pound spinach
  • 1/4 to 1/2 teaspoon red pepper flakes
